Tomato Basil Bow Tie Pasta Salad Pairing: 2017 Columbia Valley Cabernet Sauvignon

INGREDIENTS:
1 lb Bow Tie Pasta
2 Tbsp extra virgin olive oil
1-3 cloves garlic to taste
1/2 cup fresh basil, chopped
2 lb cherry tomatoes
1 cup shredded Parmesan cheese
1 tsp Salt
1/2 tsp ground black pepper

INSTRUCTIONS:

  1. Cut tomatoes in half and lightly squeeze the juice into a bowl. Chop the tomatoes.
  2. In a bowl, combine the chopped tomatoes, fresh basil, olive oil, garlic, salt, red pepper flakes and black pepper. Cover the bowl and let sit at room temperature for 15 minutes.
  3. Meanwhile, cook the bow-tie pasta al dente according to package directions. Drain well.
  4. Toss the hot pasta with the tomato mixture and Parmesan. Adjust the seasoning to taste.
